Food consumption trends, 1900-1971

The writer intended to present data on the changes that have occurred in the consumption of basic food groups throughout the first seventy-one years of the twentieth century. A retracing of the food consumption patterns of man from 1900 to 1971 revealed the principal milestones which affected food consumption. The current dietary patterns and food selection of middle-income families were compared to the results of past studies dealing with food trends. Factors which contributed to the changes in food consumption between 1900 and 1971 were investigated. The results of the five-day dietary record were used to assess the nutritional status of each husband and wife. The findings were then compared to the Recommended Daily Dietary Allowances to determine the adequacy of their diets. The outcome of the study was a complete picture of this group's food patterns and dietary habits.
